Hoi An Specialities Food – Cao lau
Together with Wonton, Cao lau is
a worthy dish bringing perfect balance for guests who visit Hoi An
Cao Lau differs from typical Vietnamese
noodle dishes because it has no soup. In Vietnamese, locals call it a “mixing
dish” because it includes vegetables, fried lard and sauce on top of the
noodles. The ingredients are placed in the dish, but it’s the customer who
mixes them together. Cao Lau is therefore a special variety of noodle dish. It
is also different from Quang noodle, another Vietnamese noodle dish, because of
the amount of sauce, the additional ingredients, and the type of noodles used.
To make Cao Lau noodles, the
rice has to be stone ground and mixed with ash and water. The ash is made with
firewood from the Cham Islands. The noodles are cut and then cooked three times
with firewood. The water to cook the noodles is also very special because it
only comes from specific wells in Hoi An. This is why Cao Lau is a dish that
can only be prepared in Hoi An. Cao Lau combines various flavors (sour,
pungent, bitter, astringent and sweet) in the vegetables, soy sauce and fried
lard. Cao Lau is served at room temperature

If Quang noodles are served with dry
pancake, Cao lau is flavored with crispy rice noodles chopped into long or
square shape then fried swell. It’s fried noodle that makes the dish delicious
and strange. The soul of this dish is the broth made from pork marinated with
five spices flavor, secret spices creating special taste, sweet but just enough
to meet the standard.
Cao Lau noodles are placed neatly at the
bottom of the bowl with bean sprouts, Tra Que vegetables, and basil. A few
slices of thin pork, shrimp, chicken, fried pork skin are all on top before
putting the sauce up, adding a little fried Cao lau, green pepper, slices of
lemon, that seems to make Cao lau meet color, taste and flavor. The dish is
also varied with many flavors so that diners can choose such as pork Cao lau,
chicken Cao lau, meat and seafood Cao lau. You can request extra fish sauce,
soy sauce according to your own taste.
